Oatmeal Cookie Bars

Cream together:
1/2 cup oil
1/2 cup margarine
1 cup sugar
1 cup brown sugar

Then add:
2 eggs
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1 T. vanilla
3 cups rolled oats (I use the cannery quick oats)
Mix together and spread in a large (11.5 x 17.25) jelly roll pan. Bake at 350 degrees for 15 minutes.

Frosting (optional):
1 1/2 cup powdered sugar
5 T. melted margarine
1 1/2 tsp vanilla
1 1/2 T. warm milk
Mix well and frost while still warm (pretty much right out of the oven).

Celeste's Chicken Taquitos

White corn tortillas
1/2 batch of Yummy Salsa (from previous post)
5 chicken breasts
1 package of cream cheese (room temp)
1/4 colby jack cheese
Olive oil to fry them

Grill the chicken breasts then hand shred them. Mix the shredded chicken with the package of cream cheese, the salsa and cheese. Warm the tortillas up in the microwave for a few seconds so they don't crack when you roll them. Place 1 T. of Chicken mix on the edge of the tortilla and roll it up tight. I fry 6 at a time in the oil so that it is easier to control them. Makes about 3 DZ. Taquitos. Serve with remaining salsa. Brian loves them!!!

Yummy Salsa

1 can of S&W Mexican stewed Tomatoes
2 roma tomatoes
1 Bunch of Green Onions
1 Bunch of Cilantro
2T. of Red Wine Vinegar
1T. of Sugar
1T. Cumin
2T. Olive Oil
Tapatio Hot sauce (as much as you like, I only use a couple splashes)
1 tsp. Garlic Powder
1 tsp. Garlic Salt
1 tsp. regular Salt
1 small can of fire roasted chopped green chilies

I cut up the green onion and pick the cilantro from the stems. Then throw it all in a blender. Blend for a couple of seconds and your done! :)

Flaky Pizza Snacks

1 can Pillsbury refrigerated crescent dinner rolls
1/3 cup pizza sauce
1/4 cup grated Parmesan cheese
1 cup finely chopped tomato
1/3 cup shredded mozzarella cheese
Chopped fresh basil leaves, if desired

-Heat oven to 375 degrees. Spray cooking sheet with cooking spray. Unroll dough into 1 large rectangle; press perforations to seal.
-Spread pizza sauce evenly over rectangle to within 1 inch of edges. Sprinkle with Parmesan cheese. Starting at short side, roll up rectangle, jelly-roll fashion. With sharp knife, cut into 16 slices. Place cut side down on cookie sheet.
-Top each slice with 1 tablespoon tomato and about 1 teaspoon mozzarella cheese.
-Bake 9 to 11 minutes or until edges are golden brown and cheese is melted. ( Bottoms will be very deep golden brown) Top with basil.

I suggest using a sharp knife, other wise they are really hard to cut. I always get frustrated cutting them. It gets messy, but they turn out great. I suggest making two rolls for a meal. They are easy to pick up and eat. YUM!

Sassy Chicken Salad

1 (10oz) can diced tomatoes and green chilies, drained
1/2 cup mayonnaise
1 tablespoon honey
1 (12.5oz) can chicken breast (Kirkland Chunk Chicken Breast)
1 cup celery, thinly sliced
1 cup grapes, halved or quartered
1/3 cup toasted pecans, chopped

In medium bowl, combine tomatoes, mayonnaise, and honey. Stir in chicken, celery, grapes, and pecans. Cover and chill. Serves 6.

I love this chicken salad. It is from the little recipe packs that come with the chicken cans from Costco, so some of you might have this already. It can be a little spicy so you can substitute regular diced tomatoes for the one with green chilies. I have never added the pecans, I always forget those, but I am sure it would be great with them. We like to eat the salad in pitas.

Gyro Pita Sandwiches

8 large pitas cut in half
1 lb. ground beef
1 lb. ground lamb
1/4c. oregano
1-1/2 T. onion powder
1 T. garlic powder
3/4 T. pepper
1 tsp. thyme
3/4 tsp. salt

sauce
1c. plain yogurt
1/4c. finely chopped cucumber
1/4c. finely chopped onion
2 tsp. olive oil
to taste
garlic powder
salt
pepper

cook meats and seasonings together. mix ingredients for sauce together. slice tomatoes and chop greens (optional)
spread sauce on the inside of pita, add some meat and stuff tomatoes and greens in. Great for entertaining! 16 servings
