PUMPKIN COOKIES

INGREDIENTS

  • 1 cup white sugar
  • 1 egg
  • 1 cup shortening (you can substitute 1/2 short. with applesauce)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup canned pumpkin
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts (optional)
  • I use LOTS of chocolate chips
  • I also added pumpkin pie spice-nutmeg would be good too

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a large bowl, cream together sugar, egg, shortening, and vanilla. Sift together flour, baking soda, baking powder, salt, and cinnamon; stir into the creamed mixture. Stir in the pumpkin, raisins, and walnuts. Drop dough by teaspoonfuls onto the prepared cookie sheets.
  3. Bake 10-15 minutes in the preheated oven.

Chicken Pot Pie

1/2 C. shredded cheddar cheese
1 diced small onio
2 Tbsp. butter
1/4 C. Parsley (I use Less)
2 cooked chicken diced into cubes
1 tsp. worcestershire sauce
1/4 tsp. black pepper
1 can cream of chicken soup
1/2 C water
1/2 bag of corn
1/2 bag of peas
Any crust recipe you want. My sister in law uses Peppridge Farm Pastry sheets and bakes for 5-10 min. I just us a double crust recipe from Better Homes)

In skillet saute onion in heated butter until onion is tender. Stir in parsley, chicken, worcestershire sauce, black pepper, soup and water.

Spread in baking pan that has crust (or sheets) in it. Add vegetables and sprinkle cheese over filling. Add top crust and bake at 400 for 25-30 minutes.

So easy and SOOOO tasty!

Parmesan Artichoke Chicken

3/4 C. Mayo
3/4 C. Parmesan Cheese (grated)
1 Can Water packed artichokes
1 tsp garlic salt for taste
bread crumbs
4-6 defrosted breasts of chicken

Chop the artichokes up. Then throw everything together except the chicken and bread crumbs. Pound out the chicken. Then place the chicken on cookie sheet then lather some of the Mayo mixture on top. then sprinkle a fair amount of bread crumbs on top. 30-45 minutes at 350 This recipe is great served over rice.
